The concept of trust is prevalent every time you frequent a purveyor of food. You trust the quality, you trust the taste, you trust that you are not going to get ill! When you walk through the door of a restaurant you have therefore made a pact with the chef and how you feel on leaving, is totally in their hands.

When we received the invite to attend the launch of TRUST at 111 by Nico (which is located in Glasgow’s West End) my immediate reaction was GENIUS. This new dining concept asks diners to sit back, relax and completely place their TRUST in the chef.

The brainchild of chef Nico Simeone, it is this innovative chef who also masterminded the super popular Six By Nico. This exclusive restaurant in Glasgow Finnieston is celebrated for its six week menu change, with menu’s being based on a different theme (past themes being Charlie & The Chocolate Factory, Disney and Childhood Memories).

Chef Nico Simeone said:

“The first and most important element of this new dining experience is the expression of trust. It’s not simply saying, ‘I don’t care what you give me,’ instead, it tells our chefs that the customer trusts their judgment about the current seasonal produce available to them and what the best courses could be at that particular moment.”

The idea behind the 5-course tasting menu (of which you get choices for each course) is that you will never have the same dinner twice. It is an immersive experience whereby guests simply choose from 12 ingredients (i.e. the main element of each dish) and then the chef and his team will use the finest of local and seasonal produce to create a meal that is both on trend and perfect for the time it is eaten.

Chef Nico says:

“Our team of Chefs are always finding creative, interesting ways to work with ingredients that will not only excite them but our guests too. In recent years the food scene has seen the rise of multiple cuisines and with TRUST we can explore these food trends and present them as part of a tasting menu to our customers.”

Priced at £25 per person, with the option to have matching wines (that have been sourced from around the globe) for an additional £22 pp this new menu concept is exceptionally good value for money. Not only that but the 12 ingredients listed on each menu card will change on the 1st of every month keeping diners on their toes.

So much did the TS team love our visit, but we have since returned and can confirm the restaurant was again completely full, just as it was on the launch. What’s more, based on the praise it has received citywide I am delighted and not at all surprised to learn that Nico’s TRUST concept is already a bit hit in Glasgow.
